It wasn’t a great leap to take our country from a 15 day social distancing requirement to an additional 30+ day mandate. I get it, slow the spread, and flatten the curve of COVID-19, and I believe, it’s the best option we have. But this Stinks!


As a Wedding and Event Custom Caterer our livelihoods depends on Weddings and Events. That means we aren’t doing Wedding Catering, Event Catering or Corporate Catering from March 15 – May 10 (or beyond). That’s a very long time with virtually no business for small business owners. A few months ago, I was invited to an event honoring a good friend who was receiving a very prestigious award. It was also great to see so many friends and folks from our community gathered to celebrate this special occasion… She really deserves her award, and everyone knows it.


The evening started with dinner at a beautiful waterfront venue in Galveston. The buffet was beautiful! Looked stunning. Chilled Peach Bliss

At our daughter's upcoming wedding the first course will be a choice of three chilled soups. Two will be a little savory and our Chilled Peach Bliss will be sweet. Peach Season is coming and this recipe will put a big smile on your face. Oh, one cool thing about this recipe is that it works well with frozen peaches, too!

Chilled Peach Bliss Serves 6-8, yields about 32 ounces


Ingredients


1# + Frozen or Fresh Peaches


2 oz Sugar


½ Cup Plain Vanilla Yogurt (low-fat works), or Sour Cream


3/4 Cup Orange Juice


1 Cup Water


1 Dash Cinnamon


6-8 Mint Leaves or a handful of Blueberries


optional: add a couple of ounces of Amaretto 😀




Directions:


Roast or Broil Peach until some are just browning about 5-1...

When you live and cook on an Island you gain a greater appreciation for refuse that’s just thrown into a trash can or dumpster that gets emptied into a landfill. Well, actually, our appreciations is for keeping as much of our stuff out of the landfill as is possible.


We hand select all of our produce from wonderful vendors. Fresh is always best. That’s why we walk into coolers, open boxes and inspect fresh fruits and veggies. Unlike most caterers whose products are dropped off from big trucks, we take the time to shop… the results are fresher, healthier and beautiful dishes.
