Great Sopapilla Cheesecake
An impressive and super easy Cheesecake Recipe. Ok, there's a lot recipes out there that use unrolled, rolled Crescent Rolls, but go ahead and use Puff Pastry sheets... they work great and I think taste better in an impressive way. Also, this recipe is scaled for 1/2 sheet pan. Folks are going to love this and try topping it with a few sliced fresh strawberries.
Sopapilla Cheese Cake Serves 1, or 24-30 squares
32 Ounce Cream Cheese Softened to room temp (microwave for 30 sec)
2 Sheets Puff Pastry
3 Cups Sugar
2 Tsp Vanilla
½ Cup Melted Butter
4 TBS Cinnamon
Preheat oven to 350 degrees
Place 1 Puff Pastry in “Pam-ed” ½ sheet pan (cover the bottom), perforate and lightly bake
Mix together warm Cream Cheese 2 cups sugar (Mixer)
Spread over puff Pastry
Place the 2nd Puff Pastry (perforated) on top of Cream Cheese mixture
Pour and Spread Butter over the top Puff Pastry
Mix remaining Sugar and Cinnamon together and sprinkle over Butter
Bake at 350 degrees for about 30 minutes or until done.
Serve and impress you family and friends!
